If you’ve already got cooked brisket on hand, this creamy, rich, and smoky queso only takes about 10 minutes to make! It’s totally drool-worthy and you may want to go ahead and make a double portion now of this Animal-Based recipe.

It can be used as either a dip or a sauce. Imagine crisp sweet potato chips dipped into steamy hot cheese sauce, or a medium-rare grass-fed steak smothered in cheese-coating gooey brisket sauce. YUM!

Read on to grab the queso recipe as well as a really easy way to make a Carnivore brisket that’s also Paleo AIP compliant. Oh, plus another idea to use up your brisket leftovers!!

How to Make an Animal-Based Brisket Queso with No Nightshades

  • Reserve a cup of my AMAZING and tender Instant Pot Brisket. For Animal-Based / Carnivore, simply omit the seasonings listed in the ingredients section, and use Redmond smoked salt (SAVE 10% WITH CODE CAVEWOMAN) to taste instead of the spices.
  • Heat some A2 or lactose-free whole milk in a pot, then whisk in some grated manchego cheese. To keep it Paleo AIP or dairy-free, use my Nacho Cheese sauce recipe instead.
  • Add your choice of seasonings to fit your diet to taste.(Yes there are non-AB dried chives in my photos – this food photographer needed a sprinkle of green – LOL!)
  • Share with a loved one, or be a greedy-gus like me and eat the whole darn thing by yourself…with a digestive enzyme on the side.

Other Ways to Use Your Queso

Make a batch of these AIP Brisket Elotes, choose the seasonings that fit your diet, and then drizzle the tops of the jars with the queso. (Extra brisket – what!? Mmm hmm.)

Pour the hot queso over scrambled eggs, inside an omelet, over sliced steak, or on top of chicken.

Ingredients

Makes 2 ½ cups

  • 1 cup finely chopped, cooked brisket (see NOTES for recipe link & options)
  • ¾ cup A2 or lactose-free whole milk (see NOTES for Paleo AIP option)
  • 8 oz manchego cheese, grated (see NOTES for Paleo AIP option)
  • 1 pinch dried oregano (omit for strict Carnivore)
  • *For Paleo only: Add ½ tsp ground cumin
  • *For Paleo & AIP only: Add ¼ tsp each garlic and onion powders

Instructions

  • Prepare the brisket, then set aside.
  • Add milk to a medium pot over medium heat. Bring to a simmer, then reduce heat to medium-low.
  • Slowly whisk in the grated cheese a small handful at a time, ensuring each handful is fully melted into the milk before adding another handful.
  • Whisk in seasonings, then stir in the brisket.
  • Bring to a low simmer (but not boiling – or this will break the cheese sauce and make it lumpy) and cook for 1 minute so that the brisket is heated through.
  • Serve the brisket queso poured over a steak, over steamed squash, with tostones, or use as a dip for your next get together with clean sweet potato chips or pork rinds.

Notes

*Garlic, onion, and cumin are not recommended if you want to keep this strict Animal-Based.
PALEO / AIP OPTION
Omit the milk and manchego. Sub a batch of this AIP Nacho Cheese.
