Uh, How Do YOu Make Curry Without…Curry?

Traditional curry has a ton of spices and flavorings that don’t mesh well on an Animal-Based (aka AB) diet. Ginger, turmeric, and onions, oh my! Garlic, cumin, hot chilis, coriander, and cardamom are also on the “no fly list” when it comes to a Carnivore Diet which only allows the lowest toxin plants in an effort to keep inflammation and oxidative damage low. So, what else is there to flavor your pot of curry with?

  • Tallow is rich in beefy flavor, as is beef bone broth. (“OK, that’s not very CURRYISH, Sam…what else, then?”)
  • Carrots are a traditional ingredient in curry dishes, so we’re keeping those. They rate as only moderately toxic on this Animal-Based Yes/No Food List that I crafted for you.
  • Mangos are also traditional in some curry recipes, and they miraculously cook up with a potato-like texture in this curry dish!
  • Lime juice and Kaffir lime leaf powder are common Indian foods. Lime juice is certified low-toxin according to Carnivore MD, but the verdict is still out on kaffir lime leaf. I used it in today’s recipe because it’s a non-allium green herb that might be considered moderately toxic, like the confirmed herb cilantro is, but I’m not 100% sure yet! (I’ll let you know when I know, my friend.)
  • Lemongrass powder is another one of those herbs that might actually be toxic, and I’m still researching this, so you can leave this out if you want to be on the safe side. I added it to my curry because I’m a rebel, Dottie.
  • Ceylon cinnamon is on the nice list, and is considered to be moderately toxic. It’s also a main ingredient in Eastern spices like garam masala.
  • Redmond fine salt (SAVE 10% WITH CODE CAVEWOMAN) gets a low-toxin rating, while coconut products like soy sauce substitute, coconut aminos, are rated moderate. This microplastic-free Utah sea salt brings up the flavors of the dish while the aminos lend a sweet-salt-umami favor.
  • And white rice is totally optional for serving this curry spooned over, but just so you know, white rice is considered moderate-toxin. I personally do not tolerate it more than once per week (Gee, thanks a bunch, Celiac!) and I have a hard time controlling myself around fluffy, aromatic Basmati. I stick to only cooking 1 serving for one meal so I don’t gorge myself on leftover rice and make myself sick and turn into a troll eating rice under a bridge with no one to love me.
  • Can’t do rice on your Paleo diet…or sticking to the Paleo Autoimmune Protocol? Make this Acorn Squash Rice recipe instead of white rice and you’ll still love yourself in the morning!

I got you. I get it. Here’s what to do instead to cut back on the tummy-fluffers:

To make this lower in carbs, omit the carrots and sub 4 chopped large zucchini.

For the slow cooker, add them halfway through cooking time.

For the Instant Pot method, add them after you depressurize the pot. Press SAUTE and add the zucchini. Simmer until the zucchini are tender to your liking.

You can also reduce the amount of mango or omit it completely if you like!

Ingredients

  • ¼ cup tallow
  • 2 lb beef stew meat
  • 6 large carrots, large-chopped
  • 1 ½ cups frozen mango chunks
  • 1 cup coconut milk
  • 2 cups plain beef bone broth
  • *Zest and juice of 1 lime
  • ¼ cup roughly chopped fresh cilantro, plus more for garnish if desired
  • 2 tsp lemongrass powder (omit for strict AB – the toxicity verdict is still out)
  • 2 tsp kaffir lime leaf powder (*sub zest of 1 lime for strict AB – the toxicity verdict is still out)
  • 2 tsp Ceylon cinnamon
  • 2 tsp Redmond fine salt
  • ¼ cup coconut aminos
  • Optional for serving: cooked white rice (AB) or acorn squash rice (AB, Paleo, AIP) (recipe in NOTES)

Instructions

Instant Pot

  • Add all ingredients (except optional rice) to the Instant Pot. Stir to combine.
  • Close the lid and seal the vent.
  • Press MANUAL. Ensure pressure is set to HIGH. Set TIME to 45 minutes.
  • When the cooking program has completed, allow it to depressurize naturally, or carefully quick-release the steam. 
  • Enjoy curry in bowls over optional cooked white rice or acorn squash rice.

Slow cooker

  • Add all ingredients (except optional rice) to the slow cooker. Stir to combine.
  • Close the lid. Set temperature to HIGH and cook for 4-6 hours or until beef is tender.
  • Enjoy curry in bowls over optional cooked white rice or acorn squash rice.

Notes
