Paleo AIP meal prep recipes have been a life saving game changer for me.

Even more so now that circumstances with my daughter going back to school at-home again, and all things quarantine (whew, sister!) I feel the flare-avoiding calling to ensure I have healthy, anti-inflammatory, autoimmune protocol meals mapped out and ready to cook.

The recipes I’m sharing with you today are some of the best cook-and-store options I have on my blog!

This means that they both store and reheat well. Oh and they are super easy to make and totally delicious!

I admit that while I do still dabble in quite a bit of on-the-fly type cooking (goes back to my professional chef days when you need to get creative to use up veggie stragglers and that frozen bit of meat that needs cooking before it turns into something scary in the back of the freezer)! But I feel the most prepared when I get ahead of the autoimmune game and actually plan out my meals.

Even if I don’t do one huge batch cook at the beginning of the week, I like having all of my ingredients on hand for exactly what I need to make that week. Writing out your shopping list and doing that grocery pickup or delivery (my favorite even pre-quarantine era) can be such time savers too!

This batch of Paleo AIP Tigernut Maple Granola cereal is the ultimate comfort food breakfast for the Autoimmune Protocol.

Crunchy grain-free, nut-free granola served in a puddle of coconut milk or Homemade Tigernut Milk really holds your hand while you go down memory lane…back to the time when eating cereal was a routine thing.

This can be served to people who aren’t even on the Paleo Autoimmune Protocol because it is so DELICIOUS and simple that they may not realize it’s AIP compliant (unless you tell them *wink*).

This Make-Ahead Breakfast Casserole wins hands-down, maybe even over soups – my other favorite autoimmune protocol compliant breaky.

Full of phyto-nutrients from sweet potatoes, Brussels sprouts, and mushrooms. Bountiful in protein from bacon and a super-easy homemade sausage crumble, with the added gut healing benefit of bone broth.

Chop, drop, cover. Dress, shake, nom. That’s how easy these AIP Health in a Jar meal prep salads are! Loaded with micro nutrients, protein, and gentle fiber to support the gut, liver, thyroid, and adrenals.

Prep these a day ahead and have lunch for you for the next 4 days (grab & go, anyone?), or have 2 lunches for 2 for 2 days!

AIP Cheesy Taters and Bacon

Cheesy Taters & Bacon is one of Hunni’s favorite AIP recipes that I make, and it’s one of mine too because I can cook it all on a sheet pan and it’s still compliant with the Paleo Autoimmune Protocol!

It’s got a gloriously baked, creamy “cheese” sauce thanks to nutritional yeast, the heavenly flavor of bacon, and nutrient-dense sweet potatoes and veggies.

Serve this with a large garden salad dressed with this Strawberry Vinaigrette for a complete meal.

Parsley, extra garlic, olive oil, oregano & vinegar give this chicken meal magnitudes of flavor. Served with simple oven-toasted plantains and a tangy slaw, this prep makes for a nutrient-dense trio that keeps your taste buds hopping for 4 days worth of meals for 1.

Meaty chili mac with zoodles in a dairy-free, cheesy, tomato-free sauce, with just the right seasonings to fool you into thinking you’re eating the REAL DEAL. Super comfort food here, y’all.
