Paleo AIP Tigernut Maple Granola
This batch of Paleo AIP Tigernut Maple Granola cereal is the ultimate comfort food breakfast for the Autoimmune Protocol.
Crunchy grain-free, nut-free granola served in a puddle of coconut milk or Homemade Tigernut Milk really holds your hand while you go down memory lane…back to the time when eating cereal was a routine thing.
This can be served to people who aren’t even on the Paleo Autoimmune Protocol because it is so DELICIOUS and simple that they may not realize it’s AIP compliant (unless you tell them *wink*).
Even though I work from home, I still find that making complicated, lengthy recipes is just not my jam.
So I adore this Paleo AIP Tigernut Maple Granola because I’m able to just quickly mix it up together in one bowl, spoon it out onto a sheet pan (man do I LOVE AIP sheet pan recipes!), then bake until crisp and golden and fragrant.
This was one of those recipes that my blogger friend, Meagen of Its All About AIP, came up with out of a desire for cozy food.
She was like, “You know what sounds really good right about now? A bowl of cereal. But I can’t eat cereal on the AIP! Or….can….I?”
And the Paleo AIP Tigernut Maple Granola was born. Full of cinnamon goodness, banana chips, and raisins. Man I am ready to make me another bowl of this on top of some coconut milk yogurt just thinking about it!
One tip of Meagen’s for making AIP flexible and comforting in the kitchen:
She loves keeping arrowroot starch and some cans of BPA-free coconut milk on hand at all times. She and I both use the brand Aroy-D. You can thicken sauces with the arrowroot, or use it plus some coconut flour and an AIP seasoning blend for dusting meats before shallow-frying in some avocado oil.
Coconut milk can also be used in sauces, smoothies, or even refrigerated then sweetened with some honey and fluffed up to use as a whipped topping….like in her Strawberry Shortcake Muffins, Vanilla Cake, and Fruit Pizza from her new book, AIP Gatherings!

Don’t have some of the ingredients in this Paleo AIP Tigernut Maple Granola recipe on hand?
You can use up just about any dried fruit in the mix. Try using banana chips and raisins, or chopped dried pineapple and cranberries for a tropical flavor.
Or add in some orange zest, mace, and clove for an orange-pumpkin spice flavor. Change it up and get creative!

Tigernut Maple Granola
Ingredients
- 1/2 cup arrowroot starch
- 3/4 cup unsweetened shredded coconut
- 1/2 cup coconut flakes or flaked coconut
- 1/4 cup tigernut flour sifted
- 1/2 cup unsweetened banana chips crushed (optional)
- 1/4 tsp sea salt
- 1.5 tsp cinnamon
- 1/2 tsp ginger
- 1/4 cup raisins
- 1/3 cup maple syrup + 1 more Tbsp if needed
Instructions
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
- In a large bowl mix together the arrowroot, shredded and flaked coconut, tigernut flour, crushed banana chips, sea salt, cinnamon, and ginger. Fold in the raisins.
- Add in maple syrup and mix until well combined. Add 1 Tbsp more of maple syrup if needed so that the mixture sticks together.
- Spoon drop tsp sized amounts onto the lined baking sheet.
- Bake for approximately 15 minutes or until crispy and golden brown.
- Let cool completely and then transfer into glass storage and store in the fridge for up to 5 days.

What’s the difference between shredded and flaked coconut?

Heya Sarah! They are the same, some regions may call it shredded, others may call it flaked. On another note, though, you can also purchase large flakes (usually found online) and they are usually only called flakes but not shredded. (If that makes sense, LOL). This recipe calls for the fine shred,not the large. I hope that helps! If you have anymore questions I’m happy to answer.

Hi! I really love this recipe, however I am currently in Portugal and can’t get my hands on coconut flakes (I can only possibly get the coconut chips which are crunchy and not soft like coconut flakes). Would the crunchy chips work? How about leaving the coconut flakes out altogether? Any idea on how that might turn out? Or maybe there is a substitute that could work? Thanks for any advice!

Yay I’m so glad you love the recipe! You can totally use more of the shredded (aka desiccated) coconut or even the coconut chips you mention in place of the coconut flakes. The texture will be just a tad different, but still very tasty!

Love this recipe! I had flaked and chipped coconut so I put the chipped in a chopper and pulsed a couple of times. I did not want the big pieces of coconut in the granola. Love the aroma while it bakes! Easy, quick and Delicious! Thank you.

This was wonderful – reminded me of eating Quaker Granola which I loved as a kid :). I made a couple of changes – I only had shredded coconut, so I used that for all of the coconut. I used 1/3 cup of puréed banana which I puréed in my food processor, plus 1 T of maple syrup – I wanted to reduce sugar. I put it in for 20 minutes at 325 degrees, stirring part way through. It’s yummy!
