This savory Paleo Beef Massaman Curry is a grain-free, gluten-free version of a classic curried dish. It’s got both Whole30 & AIP options, too!

Get ready for a bowl of this delicious curried delight that is full of protein and nutrients. It is excellent reheated so be sure to pack a thermos to take this with you to work or school.

Take advantage of your microwave to amazingly-lazily cook the sublimely simple cauliflower rice in a bowl while you make the rest of the meal in one pot on the stove – all in under an hour!

Why Serve Cauliflower Rice with the Paleo Beef Massaman Curry?

Cauliflower is both naturally low in carbohydrates and high in sulfuric nutrients.

Keeping the carbs low with the “rice” means that you can add another carbohydrate in the meal elsewhere without doubling up. I think sauteed plantains or these Spicy Fries would go deliciously on the side, or even adding chopped white potatoes (or sweet potatoes for AIP) to the curry stew!

Sulfuric nutrients help to support liver function and detoxification. This means that while you enjoy your delicious curried meal, your body is thanking you for the assistance you’re providing.

Of course, if you are not doing Whole30 or the Paleo AIP, and you have successfully introduced certain gluten-free grains such as white rice into your diet (Go #TeamWhiteRice!), you could either skip the cauliflower rice and use cooked white rice instead.

A trick I like to do on occasion is to mix half-and-half cooked white rice with cooked cauli rice. That way I’m getting a bit of both world in terms of flavor and texture – all without overdoing the grains and without skipping those vital carbs!

Paleo Beef Massaman Curry

Paleo Beef Massaman Curry is a grain-free, gluten-free version of a classic curried dish. Whole30 & AIP options.

Ingredients

  • 1 large head cauliflower
  • 1 ½ lb tender steak of choice, cut into 1 ½“ cubes
  • 1 to 2 Tbsp grass-fed butter (for Whole30 / AIP, sub coconut oil)
  • ½ onion, finely chopped
  • 3 Tbsp Masaman curry paste (for Whole30 sub 1 to 2 Tbsp curry powder) (for AIP, sub 1 to 2 Tbsp AIP curry powder – see NOTES)
  • 1 can additive-free coconut milk
  • 2 cups baby spinach
  • 2 Tbsp fresh cilantro, chopped
  • sea salt and coconut aminos, to taste
  • 1 lime, quartered

Instructions

  1. Cut the cauliflower into florets. Place the florets in a food processor and pulse until it takes on a fine rice-like texture.

  2. Transfer cauli rice to a large microwave-safe glass bowl. Microwave on high for 3 to 4 minutes, until cooked through but not mushy. Remove from the microwave, cover to keep warm, and set aside.

  3. Heat the butter or oil in a large skillet over medium heat. When hot, add the steak.

  4. Brown about 2 to 3 minutes per side or until desired doneness is reached, flipping the pieces over once. Transfer steak to a plate or bowl, then set aside.

  5. Return pan to the heat, adding 1 Tbsp more butter if necessary. When hot, add onion to and sauté until translucent, about 5 to 7 minutes.

  6. Add the curry paste or powder to the pan and sauté for 1 minute until fragrant.

  7. Stir in coconut milk, then add the cooked steak and the spinach. Cover and reduce heat to a simmer. Simmer for 20 minutes.

  8. Stir in cilantro, then season with salt and aminos to taste. Serve the curry over the cauliflower rice with lime wedges on the side, and enjoy!

No microwave? If desired, you can cook the cauli rice on the stovetop in a separate skillet or pot rather than microwaving it.

Need more carbs? Add diced potatoes (not for AIP), sweet potatoes, carrots, or plantain to the pan when adding the onion. You can also add raisins to the pan when you add the coconut milk.
