Sheet Pan AIP Fried Mashed “Potatoes” (Paleo, Whole30)

What’s up with white potatoes?
If you casually mention in conversation that you do not eat potatoes, just count backwards from three and wait for someone to say, “I could NEVER live without potatoes!” I get it. I’ve been there. A world without tots and fries sounds like no world I’d want to live in. The good news is that there are so many better options out there instead of potatoes that I promise you will not even miss them.
Our old friend, the potato, shows his face alongside so many meals. He is the go-to food on the side of most burgers. He is fried in some garbage oil and dunked in all sorts of sugary sauces while we enjoy sporting events at the bar. And, let’s be honest, he’s cheap.
But when it comes to nutrients? He is kind of a total bust. Potatoes come with about 37g of carbohydrate. That is 37g of carbs that will break down into glucose with some being stored as glycogen and the rest converted to fat by our livers. You will find fewer carbs in a Snickers bar.
Plus, white potatoes (but not sweet potatoes or yams) are nightshades. These are one of the food groups that are temporarily eliminated on the Paleo Autoimmune Protocol in order to help reduce inflammation, re-seal a leaky gut, and discover your food triggers.
Enter cauliflower.

Sheet Pan AIP Fried Mashed “Potatoes”
Ingredients
- refined olive oil
- 1 lb fresh cauliflower florets
- 1 cup + 1/4 cup cassava flour, divided
- 2 Tbsp coconut flour
- ½ tsp garlic powder
- ½ tsp Himalayan salt
- ½ tsp baking soda
- 1 ¼ cups cold seltzer water
Instructions
- Heat oven to 425 F. Line a large sheet pan with parchment, then drizzle with 2 Tbsp oil.
- Add cauliflower to a medium mixing bowl, then sprinkle 1/4 cup cassava flour over the top. Toss the florets with a dinner spoon until all sides are coated.
- To a large mixing bowl, add remaining 1 cup cassava flour, coconut flour, garlic powder, salt, and baking soda. Use the same spoon to mix until combined.
- Gently whisk cold seltzer water into the flour mixture until smooth.
- Pour half of the cauliflower florets into the large bowl. Stir them with the spoon until coated in batter.
- Drop the batter-coated florets into the baking sheet, leaving about 1/2” space between each one.
- Repeat the battering and dropping process with the remaining flour-coated florets.
- Bake for 20 minutes, then use tongs to flip over.
- Bake for another 20 minutes or until deep golden brown and crispy.

You might be able to get away with substituting it with a blend. 🙂 Try mixing 1 cup tapioca or arrowroot starch with 1/4 cup coconut flour and see if that work for you. Let me know if you try it and how it comes out! (You can always do a test batch, too, like 1/4 batch first.)
