AIP No-Cook Not-Tomato Sauce

A nightshade-free AIP No-Cook Not-Tomato Sauce for your favorite recipes! Paleo Autoimmune Protocol and Whole30 compliant.

Ingredients

  • 1/2 cup cooked, sliced beets
  • 1 cup pumpkin puree
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • ¼ cup bone broth or water (plus more to thin as desired)
  • 2 to 4 large garlic cloves
  • 1 tsp Himalayan salt
  • ½ tsp dulse powder (optional)
  • ½ tsp onion powder
  • ½ tsp ginger powder
  • 2 Tbsp Italian seasoning (optional, or herbs of your choice)

Instructions

  1. Add all ingredients to a high-speed blender. Puree until smooth.

  2. Thin with extra bone broth or water if desired.

  3. Use in your favorite recipes as a tomato sauce replacement.

  4. Store in the fridge for up to 5 days or freeze in small portions for longer storage.

Recipe Notes

Easily doubles, triples, and quadruples for getting ahead with batch cooking and meal prep!

For a chunkier texture, pulse in the blender until desired texture.

For a thinner sauce, add 2 Tbsp more water or broth at a time until desired thickness.

For a more orange sauce, use cooked orange beets instead of cooked red beets.
