Sheet Pan AIP Fried Mashed "Potatoes"

These Sheet Pan AIP Fried Mashed "Potatoes" are a total Paleo and Whole30 snack food hit! The ultimate bar food - without the hangover.

Ingredients

  • refined olive oil
  • 1 lb fresh cauliflower florets
  • 1 cup + 1/4 cup cassava flour, divided
  • 2 Tbsp coconut flour
  • ½ tsp garlic powder
  • ½ tsp Himalayan salt
  • ½ tsp baking soda
  • 1 ¼ cups cold seltzer water

Instructions

  1. Heat oven to 425 F. Line a large sheet pan with parchment, then drizzle with 2 Tbsp oil.

  2. Add cauliflower to a medium mixing bowl, then sprinkle 1/4 cup cassava flour over the top. Toss the florets with a dinner spoon until all sides are coated.

  3. To a large mixing bowl, add remaining 1 cup cassava flour, coconut flour, garlic powder, salt, and baking soda. Use the same spoon to mix until combined.

  4. Gently whisk cold seltzer water into the flour mixture until smooth.

  5. Pour half of the cauliflower florets into the large bowl. Stir them with the spoon until coated in batter.

  6. Drop the batter-coated florets into the baking sheet, leaving about 1/2” space between each one.

  7. Repeat the battering and dropping process with the remaining flour-coated florets.

  8. Bake for 20 minutes, then use tongs to flip over.

  9. Bake for another 20 minutes or until deep golden brown and crispy.
