Heat 1 Tbsp of the tallow or coconut oil in a large cast iron skillet over medium heat.
Meanwhile, add eggs, syrup, water, salt, baking soda, and vinegar in a blender on low speed for 5 seconds or until smooth but NOT frothy.
Add banana flour and blend again on low speed until smooth.
Cook batter in the hot fat in 2 Tbsp scoops. Fry on each side for 60 to 90 seconds or until golden brown.
Enjoy with optional toppings of butter, berries, and/or maple syrup.
Also delicious as a sandwich bread with slices of avocado and bacon!
