Animal-Based Banana Flour Pancakes (Carnivore, Paleo)

Ingredients

  • ¼ to ⅓ cup tallow or coconut oil, divided
  • 4 large eggs
  • 2 Tbsp honey or maple syrup
  • ¼ cup filtered or spring water
  • 1 dash Redmond fine salt
  • tsp baking soda
  • 2 tsp apple cider vinegar
  • 1 cup green banana flour
  • Butter, berries, honey and/or maple syrup, for serving (optional)

Instructions

  1. Heat 1 Tbsp of the tallow or coconut oil in a large cast iron skillet over medium heat.

  2. Meanwhile, add eggs, syrup, water, salt, baking soda, and vinegar in a blender on low speed for 5 seconds or until smooth but NOT frothy.

  3. Add banana flour and blend again on low speed until smooth.

  4. Cook batter in the hot fat in 2 Tbsp scoops. Fry on each side for 60 to 90 seconds or until golden brown.

  5. Enjoy with optional toppings of butter, berries, and/or maple syrup.

Recipe Notes

Also delicious as a sandwich bread with slices of avocado and bacon!
