Add all ingredients (except optional rice) to the Instant Pot. Stir to combine.
Close the lid and seal the vent.
Press MANUAL. Ensure pressure is set to HIGH. Set TIME to 45 minutes.
When the cooking program has completed, allow it to depressurize naturally, or carefully quick-release the steam.
Enjoy curry in bowls over optional cooked white rice or acorn squash rice.

*To make this lower in carbs, omit the carrots and sub 4 chopped large zucchini. For the slow cooker, add them halfway through cooking time. For Instant Pot, add them after you depressurize the pot. Press SAUTE and add the zucchini. Simmer until the zucchini are tender to your liking. You can also reduce the amount of mango or omit it if you like.
