Ingredients

Salmon Skewers

  • 1.5 pounds of salmon filet skin removed and cut into 1 ½ inch cubes
  • 2 Tbsp refined olive oil or melted tallow
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Sea salt and black pepper to taste
  • Wooden or metal skewers if using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning

Cilantro Mayo

  • 1 cup fresh cilantro leaves
  • ½ cup mayonnaise made with pure avocado oil olive oil, or tallow (or sub unsweetened coconut milk yogurt)
  • 2 cloves garlic minced
  • 2 Tbsp lime juice
  • Sea salt and black pepper to taste

Instructions

  • Preheat your grill to medium-high heat.
  • In a large bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the salmon cubes to the bowl and gently toss them until well-coated with the seasoning.
  • Thread the seasoned salmon cubes onto the skewers. Make sure not to overcrowd the skewers to ensure even cooking.
  • Place the skewers on the preheated grill. Grill for about 3-4 minutes on each side or until the salmon is fully cooked and has a slight char on the edges.
  • While the salmon is grilling, prepare the aioli. In a food processor or blender, combine cilantro leaves, mayonnaise, minced garlic, lime juice, salt, and pepper. Blend until smooth and creamy.
  • Serve the grilled salmon skewers hot with a side of cilantro aioli for dipping. Garnish with additional fresh cilantro or lime wedges if desired.

Notes

  • For AIP: Omit paprika and black pepper. Use coconut milk yogurt instead of mayo.
  • For Animal-Based: Omit garlic powder, paprika, black pepper, and garlic.
  • For Carnivore: Omit spices and herbs if desired. Use tallow-based mayo. Omit lime juice.
