Ingredients
Salmon Skewers
1.5poundsof salmon filetskin removed and cut into 1 ½ inch cubes
2Tbsprefined olive oilor melted tallow
1tspgarlic powder
1tsppaprika
Sea salt and black pepperto taste
Wooden or metal skewersif using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning
Cilantro Mayo
1cupfresh cilantro leaves
½cupmayonnaisemade with pure avocado oil olive oil, or tallow (or sub unsweetened coconut milk yogurt)
2clovesgarlicminced
2Tbsplime juice
Sea salt and black pepperto taste
Instructions
Preheat your grill to medium-high heat.
In a large bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the salmon cubes to the bowl and gently toss them until well-coated with the seasoning.
Thread the seasoned salmon cubes onto the skewers. Make sure not to overcrowd the skewers to ensure even cooking.
Place the skewers on the preheated grill. Grill for about 3-4 minutes on each side or until the salmon is fully cooked and has a slight char on the edges.
While the salmon is grilling, prepare the aioli. In a food processor or blender, combine cilantro leaves, mayonnaise, minced garlic, lime juice, salt, and pepper. Blend until smooth and creamy.
Serve the grilled salmon skewers hot with a side of cilantro aioli for dipping. Garnish with additional fresh cilantro or lime wedges if desired.
Recipe Notes
For AIP: Omit paprika and black pepper. Use coconut milk yogurt instead of mayo.
For Animal-Based: Omit garlic powder, paprika, black pepper, and garlic.
For Carnivore: Omit spices and herbs if desired. Use tallow-based mayo. Omit lime juice.
