Ingredients

  • 4 cups unsweetened banana chips
  • 2 cups unsweetened large dried coconut flakes
  • 2 Tbsp butter, melted (for Paleo AIP, sub tallow)
  • 2 Tbsp honey or maple syrup
  • 1 dash Redmond fine salt
  • 1 tsp ground Ceylon cinnamon
  • ½ cup additive-free raisins

Instructions

  1. Heat oven to 300 F. Line a large sheet pan with parchment if desired.

  2. Add all ingredients to the sheet pan. Use a large spoon to toss well to coat. Spread into an even layer.

  3. Bake for 7 to 9 minutes, stirring halfway through cooking time, or until golden brown. (Keep a close eye on it as the coconut can go from brown to burnt very quickly.)

  4. Cool completely before storing in an airtight container in the fridge for up to 2 weeks. Can be frozen for up to 6 months.

Recipe Notes

Serve as-is, or with A2 casein milk, kefir, or yogurt. (For Paleo AIP, serve with additive-free coconut milk yogurt, like CocoJune.)
