Ingredients

  • 2 Tbsp butter -or- tallow
  • 2 medium leeks -or- 2 large summer squash halved and sliced
  • 3 cloves garlic minced, optional
  • 2 lb celeriac root -or- celery stalks peeled and chopped
  • 3 cups chicken bone broth
  • 1 cup milk -or- coconut milk
  • Juice of ¼ lemon reserve zest of the whole lemon for garnish if desired
  • Sea salt to taste
  • Black pepper to taste, optional
  • Fresh dill chopped

Instructions

  1. Add butter or tallow to a large pot over medium heat. While it heats, wash the leeks (if using) to remove all sand, then pat dry with a kitchen towel.
  2. Add leeks to the hot fat. Cook until tender, stirring occasionally, about 5 minutes.
  3. Stir in garlic and celeriac, then cook for 1 minute. Add broth, milk, lemon juice, salt, and black pepper.
  4. Bring to a simmer, then reduce heat to maintain the simmer. Cover and cook for 15 minutes or until celeriac is very tender.
  5. Carefully use a countertop or immersion blender to puree until very smooth.
  6. Enjoy topped with dill and optional lemon zest.

Recipe Notes

Use tallow and coconut milk for AIP and paleo.

Omit black pepper for AIP.

Use summer squash and celeriac root for animal-based.

Omit garlic and black pepper for animal-based. Use celery stalks for keto.
