Ingredients

  • 2 lb ground beef
  • 1 onion diced
  • 1 28 oz BPA-free can crushed tomatoes
  • ½ of a 6 oz BPA-free can tomato paste
  • 1 ½ Tbsp Italian seasoning
  • 1 tsp garlic powder
  • Sea salt and pepper to taste
  • 1 Tbsp olive oil
  • 4 medium zucchini spiralized or large-grated (at room temperature)
  • ¼ cup shredded cheese
  • ¼ bunch fresh parsley chopped

Instructions

  • In a large pot, cook and finely crumble the ground beef over medium heat.
  • Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 8 minutes.
  • Add the crushed tomatoes, tomato paste, dry seasonings, and oil to the skillet. Stir well to combine.
  • Simmer the sauce for about 10 minutes, stirring occasionally.
  • Serve the zucchini noodles topped with the meat sauce and Parmesan cheese.

Notes

If you prefer a creamier sauce, you can add ½ cup of heavy cream or primal dairy-free milk to the meat sauce while simmering.
If you prefer the zucchini noodles hot, you can lightly steam them before serving.
For Paleo: Omit shredded cheese, sub nutritional yeast.
For AIP: Omit crushed tomatoes and tomato paste, sub AIP No-Cook Not-Tomato Sauce.  Omit black pepper. Omit shredded cheese, sub nutritional yeast.
For Animal-Based: Omit onion, sub shredded carrots if desired. Omit crushed tomatoes and tomato paste, sub Animal-Based Pumpkin Marinara.  Omit garlic powder and black pepper.
For Carnivore: Omit onion, tomatoes, olive oil. Consider omitting/including seasonings and herbs as tolerated. Omit zucchini, sub Easy Protein Sparing Noodles.
